The go to classic comfort meal that the family will love. Not only is meat loaf relatively cheap, it is absolutely delicious!

Ingredients

Meatloaf

  • 2 lbs ground beef
  • 1 cup bread crumbs
  • ¼ cup whole milk
  • ¼ cup ketchup
  • 2 eggs
  • 1 small onion diced
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp mustard
  • 1 tsp garlic Minced or powder
  • 2 tsp salt
  • ½ tsp pepper

Glaze Topping

  • ½ cup ketchup
  • 1 Tbsp mustard
  • 2 Tbsp brown sugar

Instructions

  • Finely dice onion
  • In large bowl combine all meat loaf ingredients.
  • Mix thoroughly- be sure not to over mix or meat loaf will become tough.
  • Transfer meat onto a large piece of aluminum foil and gather edges around the loaf.
  • In Instant pot our in ½ cup of water (If adding potatoes place potatoes on the bottom)
  • Place foil loaf on top of potatoes or on top of trivet.
  • Pressure cook on high for 25 minutes and quick release.
  • Remove loaf and top with glaze.

If Baking in the Oven

  • Preheat oven to 350° degrees and bake for 1 hour or until cooked thoroughly.

Glaze Topping

  • In a small bowl combine ketchup, mustard, and brown sugar
  • Spread onto warm meatloaf

Biscuits and Gravy

A quick weeknight dinner or a cozy weekend breakfast. Biscuits and gravy are one of my all time favorite dishes.

Ingredients

  • 1 can biscuits or Bisquick mix made to instructions
  • 1 package sausage links
  • ¼ cup flour
  • 2 ½ cup milk
  • salt and pepper to taste

Instructions

  • Make biscuits according to package directions
  • Heat pan on medium high heat and brown sausage links while crumbling.
  • Slowly mix in flour until it is combined with sausage.
  • Gradually add milk and stir until combined and thickened.
  • Serve over hot halved biscuits.

Potato Ham Casserole

Also known as funereal potatoes. but I promise that these will make you anything but sad.

Ingredients

  • 6 medium potatoes rinsed and diced
  • 3 tbsp butter for sauteing the ham and onion
  • 5 slices ham/ lunch meat diced
  • 1 small onion diced
  • ¼ cup butter for roux
  • 3 tbsp of all purpose flour
  • 1 ½ cup milk
  • 1 cup cheddar cheese
  • ½ cup corn flakes or bread crumbs I prefer corn flakes

Instructions

  • Preheat oven to 350°
  • Rinse and dice all of your potatoes into dime size piece.
  • Place potatoes into instant pot and steam with ¼ cup of water for 5 minutes or until soft.
  • Chop onion and ham and set to side.
  • Heat pan on medium heat and melt 3 tbsp of butter and saute ham and onion until it becomes soft.
  • Butter casserole dish.
  • Once potatoes are soft mix into ham and potato mixture and transfer into buttered casserole dish.
  • Melt ¼ cup of butter in skillet over medium heat.
  • Slowly stir in 3 tbsp of flour until smooth.
  • Gently add milk into flour butter mixture until roux has thickened. string continuously.
  • Reduce heat and stir in cheese until fully melted.
  • Pour roux over ham and potato mixture.
  • Add bred crumbs or corn flakes to the top of your casserole.
  • Bake in the oven at 350° fir 35-30 minuets or until golden brown.
